TASTING NOTES
A pale gold robe with green hues. The delicate and complex nose opens on white flowers and exotic fruits, lychee and mango, then lemon, grapefruit and pear. The attack is direct and bright; the wine unfolds elegantly on the fruit, carried by a dense structure and a fine acidity that gives it great length, over a mineral backdrop with a hint of flint. Serve at around 12°C. It can be enjoyed young and can be kept for four to five years.
The composition

Terroirs
Appellation Pouilly-Fumé, one hundred percent sauvignon blanc. A large part of the vines is planted on the south-facing slope of the Saint-Andelain hill, on Kimmeridgian marl resting on fossil limestone; they are on average 25 to 35 years old. The grapes are destemmed then pressed by gravity, giving 80% free-run juice. Fermentation lasts six to eight weeks in stainless steel vats, at low temperature, around 15°C. The wine then rests for three to six months on its lees, stirred regularly, is blended seven to eight months after the harvest and awaits bottling in glass-tiled vats. No wood is used.
About this house
Since the end of the 18th century, the Comtes Lafond family has owned the largest and most renowned vineyard of Pouilly-Fumé at the Château du Nozet, in Pouilly-sur-Loire. Baron Patrick de Ladoucette, who took over the vines in 1972, extended this history to Sancerre, with the Comte Lafond cuvées, and to Chablis, with the Régnard house.
Ladoucette's Pouilly-Fumé is the house's classic: the sauvignon from Nozet without artifice, vinified without wood to let the fruit and the limestone of Saint-Andelain speak for themselves.
The perfect pairing
Aperitif
The liveliness and citrus notes of the sauvignon accompany the shrimp without ever overpowering it.
Starter
The lemon and grapefruit of the wine act like a splash of citrus over raw salmon, and its acidity balances the richness.
Main course
The flinty note echoes the grilled flavour, and the white flowers the delicate flesh of the sea bream.
